Semillon grapes were gently pressed to extract clean free run juice. This handled very protectively to retain fresh zesty Semillon flavour. The clarified juice is gently fermented in stainless steel with QA-23 yeast. The finished wines were left on light lees until blending. Sauvignon Blanc was given 12 hours skin maceration time to extract a more herbaceous flavour.
Pale straw in colour, the 2008 Christobel’s displays delicate aromas of honeydew melon, lemongrass and thyme with a hint of apple blossom. The palate is zesty and refreshing, with an abundance of tropical fruit flavours finishing clean and fresh.
