The grapes for the 2008 Galway Shiraz are sourced from our loyal grower base in the Barossa, an area renowned for the variety. Once harvested, the grapes were fermented in static potters and rotary fermenters. The warm temperatures at the onset of fermentation, along with three to five days post ferment maceration has helped extract soft fleshly tannins and build good wine structure.
