Tasting Note Sparkling Cask, Aged 12 Years: Finished in an older sparkling barrique, with the colour coming from the oak, it is light amber in colour with plenty of cedar, spice, zesty citrus fruit and hints of fig and nutmeg. On the palate, it is rich and elegant with plentiful notes of crème brulee, a silky texture and beautiful long length of flavour. Vibrant and light with a feeling of effervescence that can only come from the barrel.

Muscat Cask, Aged 12 Years: Finished in a more traditional format for whisky, an aged Muscat barrel. Dark honey in colour, it is rich and sweet on the nose with complex raisined fruits showing its Muscat heritage along with a rancio character reminiscent of an aged fortified, along with plentiful flavours of coffee and roasted almonds. On the palate it is rich, oily and mouthfilling with great length of flavour and consistency throughout the palate.

Char Barrique, Aged 15 Years: Charred with hot fire for 30 seconds in the Yalumba Cooperage. The whisky is deep tarry brown in colour. It opens on the nose with hints of hazelnut, dark chocolate, plenty of smoke and spice. The flavours continue on the palate with an added layer of fruitcake, peat, gingerbread and a hint of bitterness, before a charry finish reminiscent of a cold winter’s night in front of the fire.
Treatment Two charges took place in 1998 and 2000, before the distillery was de-commissioned in 2001. It was then re-commissioned for a further five charges in 2011, 2014, 2017 2021 and 2024. Made from barley grown near Ardrossan on the Yorke mPeninsula, this single malt reflects both regional character and the long tradition of coopering at Yalumba.

Sparkling Cask, Aged 12 Years: Matured in seasoned oak for 8 years before a four-year finish in a French oak sparkling wine barrique, it balances richness with remarkable freshness and length in every dram.

Muscat Cask, Aged 12 Years: This marks the third release from our 2011 distillation. Aged initially in a selection of casks for 10 years and then finished for 2 years in an ex-Muscat cask.

Char Barrique, Aged 15 Years: Matured for 15 years and finished in French oak barrique cask no. 130810, it draws its distinctive character from oak chared over open flame in the Yalumba Cooperage. A long-standing tradition, carried through generations.
