Cabernet & Shiraz 2021

Vintage quality:
Late Winter/Spring rains in the Barossa and Coonawarra combined with mild weather during flowering led to ideal set, creating wines of good balance, style and exceptional varietal characteristics.
Cellar guide:
The Caley takes time to reveal its true character. Drinking beautifully on release the wine will live on for decades in the cellar. If opened as a younger wine we recommend double decanting prior to serving.

Notes:
The 2021 Caley heroes the blend of Coonawarra Cabernet Sauvignon and Barossa Shiraz, showing beautifully defined aromatics, richness and concentration and represents a wine for the cellar. Very deep and dense in colour. So expressively Coonawarra and so very like The Caley! This is an inviting and superbly floral wine. Stunning perfume of blackfruits, cassis, rose petals, iodine, violets, fine spices, cinnamon, dried herbs and cedary tones. This is a defined wine that has such intensity through the palate, yet is so graceful, regal and precise. The Shiraz fruit intertwines so perfectly with the Cabernet Sauvignon delivering a long silken flow throughout a seamless palate, completed with a prominent fine powdery mineral tannin profile
